Step 1: Add the potatoes to a heavy pot of salted water and boil until tender. Drain and cool the potatoes, then peel and mash them well.
Step 2: Add salt and pepper to taste and continue mashing.
Step 3: After mashing, create a well in the centre of the potato mixture and crack an egg into it. If you don’t like eggs, you can skip this step.
Step 4: Next, spread the maida batter on a plate or a clean kitchen surface, place the potato mixture on it, and knead everything together to form a dough.
Step 5: Cut the dough into sections and roll it into a thick rope. Then cut it into ½-inch pieces and set them aside on a lightly floured surface.
Step 6: To make the gnocchi more appealing to children, you can take a fork and roll this little dough on it to form a decorative shape like an oyster.
Step 7: Boil a large pot of water and drop the rolled gnocchi into the boiling water. Once the gnocchi rises to the surface, boil for an additional minute and then strain.
